Sweet Corn and carrot balls

A yummy snack for kids

Makes: 5-6 wadas


Ingredients

  1. Chana dal  - 1/2 cup (Soak in water for about 2 hours and grind into a coarse paste)
  2. Sweet corn kernels - 1 tbsp
  3. Onion - 1 tbsp (Finely chopped)
  4. Carrot - 1 tbsp (Grated)
  5. Ginger - 1/2 tsp (minced)
  6. Green chili - 1/2 tsp (minced)
  7. Salt as per taste
  8. Oil - For deep frying

Method
1) Mix all the ingredients above except the oil

2) Heat oil. Make small balls of the mixture and drop in oil

3) Fry till golden brown on both sides

4) Serve hot with ketchup

Veg cutlet

A very healthy and tasty snack. I added whatever veggies I had at home so you can change the proportion of the veggies or add other veggies as per your taste. 

Makes - 20-25 cutlets


Ingredients

  1. Beetroot (Grated) - 2 cups 
  2. Carrot (Grated) - 1 cup
  3. Spinach (finely chopped) - 1/2 cup
  4. Potatoes (Boiled and mashed) - 4 cups
  5. Ginger paste - 1 tsp
  6. Sweet corn paste - 1 tbsp (Also added a handful of boiled whole sweetcorn)
  7. Coriander cumin powder - 1 tbsp
  8. Amchoor powder - 1 tsp
  9. Turmeric powder - 1/2 tsp
  10. Chili powder - 1 tsp
  11. Salt as per taste
  12. Oil - As required for shallow frying


For the coating

  1. Cornflour - 2 tbsp
  2. Breadcrumbs or semolina

Method:

1) Heat about 2-3 tbsp oil. Fry the ginger for 2 -3 minutes

2) Add the beetroot, carrot and spinach. Fry for 5-10 minutes till veggies soften.

3) Add the ingredients from 7-11. Mix well.

4) Add the potato and sweet corn paste.

5) Turn off heat and let cool. Take a small ball of this mixture and flatten with your hands to form a cutlet shape.

6) Mix the cornflour in little water to form a paste of thick consistency.

7) Dip the cutlet into this paste and immediately roll into breadcrumbs or semolina.

8) Shallow fry till golden brown. Serve with ketchup.

Methi (Fenugreek) wadi

I had a methi bunch in the refrigerator which was getting dried up and so started searching online for recipes. Found a number of recipes and used a combination of several recipes to prepare this tasty yet healthy snack

Serves: 3-4 people


Ingredients:


  1. Methi (Fenugreek) leaves (finely chopped) - 1 bunch
  2. Wheat flour - 4-5 tbsp
  3. Gram flour (Besan) - 2 tbsp
  4. Semolina (Rawa) - 2 tbsp
  5. Cumin powder - 1 tsp
  6. Baking Soda - 1/2 tsp
  7. Garlic (minced) - 1 tsp
  8. Ginger (Grated) - 1 tsp
  9. Green chili paste - 1 tsp
  10. Oil - 1 tbsp

For the tempering:

  1. White sesame seeds - 1/2 tsp
  2. Mustard seeds - 1/2 tsp
  3. Oil - 1 tsp

Method:

1) Mix all the ingredients except oil. Knead into a soft dough. Add very little water while kneading

2) Divide the dough into 5-6 parts and shape into cylinders. Place into a greased flat vessel

3) Steam in pressure cooker for 20-25 minutes

4) Cut each cylinder into small pieces.

5) Shallow fry in oil till golden brown on both sides

6) Heat the oil set aside for tempering. Add the sesame seeds and mustard seeds

7) Pour over the cut wadis.Serve with ketchup.

Tip: In order to get rid of the bitter taste of methi, add salt to the chopped methi and leave it for 5 minutes. Then squeeze out water from this methi and discard it.

Snake Gourd (Parwal) stuffed Prawns

Another of my mums mouthwatering prepatation!

Serves -3-4 people


Ingredients


For the prawns filling:
  1. Prawns-l cup
  2. Onion -2 medium chopped
  3. Potatoes(optional )- 1 medium
  4. Green chilies - 2
  5. Grated Coconut - 2 tbsp
  6. Coriander leaves - 1 tbsp
  7. Sola or kokum -  (3-4)
  8. Turmeric powder - 1/2 tsp
  9. Chili powder - 1 tsp

For the Snake gourd:
  1. Snake Gourd (Parwal) - 1 whole 
  2. Semolina - 3 tbsp (For frying)
  3. Oil - for frying

Method:

1) Mix all the ingredients for the prawns filling together in a vessel

2) Add turmeric powder, chili powder and salt as per taste

3) Add little water and keep on flame

4) Keep covered and let cook for 15 minutes stirring intermittently. Turn off heat once cooked.

5) Peel the snake gourd. Chop into pieces and de seed them.Add little water and microwave them for 5-8 minutes or till they are cooked.

6) Stuff them with the prawns filling.

7) Coat with semolina. 

8) Spread oil on a pan. Shallow Fry the snake gourd pieces till golden brown on both sides.

Friday chicken


This is my own recipe. I call it Friday chicken because it has been our Friday night dish on many occasions :)

Ingredients:

For the marinade:
1) Garlic (10 -15 cloves)
2) Ginger (1 medium piece, peeled and chopped)
3) Coriander (A handful)
4) Mint leaves (A handful)



For the chicken:
1) Curry leaves (15-20 leaves)
2) Green chillies (3-4 chopped & vertically slit)
3) 3-4 cloves
4) 2-3 cinnamon sticks
5) Onion (3-4 medium sized, chopped vertically)
6) Chicken (150 gms) cleaned and chopped into small pieces





Method:
1) Grind the Garlic, ginger, coriander and mint leaves into a fine paste.

2) Marinate chicken with turmeric, chilly powder and the ground paste.

3) Heat oil. Add the cloves, cinnamon sticks. Add Green chillies, curry leaves and onion.

4) Once onion turns brown, add the chicken.

5) Add ready made Everest chicken masala. Add chilly powder/salt as per taste.


6) Let it cook on medium heat. Keep stirring in between. Garnish with coriander.
