Mix Veg sandwich

Makes - 8 sandwiches

Ingredients:

  1. White/Brown bread - 1 loaf.
  2. Carrot - 1 grated
  3. Capsicum - 1 finely chopped
  4. Green peas - 1 cup
  5. Potato - Boiled and mashed - 1 medium sized
  6. Onion - 1 finely chopped
  7. Green chillies - 2-3
  8. Ginger - grated 1 tsp
  9. Garlic - Minced  - 1 tsp
  10. Soya sauce - 1 tsp
  11. Pepper powder - a pinch

  Method:

1) Heat oil. Fry the ginger, garlic and green chilles for 2 minutes

2) Add onion. Fry for 5 minutes

3) Add the carrot, capsicum and green peas. Fry for 7-8 minutes.

4) Add potato. fry for 2 more minutes

5) Add soya sauce, pepper powder and salt. Fry for 2 more minutes and turn off heat

6) Coat 2 slices of bread with butter on one side. Fill the stuffing. Heat in a sandwich maker. Serve with ketchup (Sorry, forgot to take a picture here)

White pulao

Perfect accompaniment for any gravy dish. I normally prepare it with chicken

Serves - 2-3 people

Ingredients

  1. Rice - 1.5 cup 
  2. Water - 3 cups
  3. Cloves
  4. Cinnamon
  5. Bay leaves
  6. Cardomom
  7. Green chillies - 3 (Slit vertically)
  8. Ginger
  9. Garlic
  10. Onion
  11. Mint leaves
  12. Butter - 1 tsp

Method

1) Wash the rice. Drain the water. Add 1/2 tea spoon of oil. Squeeze a little lime. Leave for about an hour

2) Heat oil. Add the cloves,cinnamon sticks, cardamom  and bay leaves. 

3) Add the green chilles, ginger and garlic.

3) Add the onion.

4) Add the rice and stir for 2 minutes.

5) Add 4 cups water.Add mint leaves. Add butter and salt

6) Pressure cook for 3 whistles.

Chicken Masala

One of my mother in law's chicken recipe, we all love it!!

Serves: 3-4 people

Ingredients:

  1. Chicken - 600 gms
  2. Potato - 1 large (Optional)
  3. Onion - 3 chopped coarsely
  4. Onion - 1 small finely chopped
  5. Tomatoes - 2 medium sized chopped
  6. Garlic - 15-20 cloves
  7. Ginger - 4-5 small pieces
  8. Pepper - 10-12
  9. Cloves - 8- 10
  10. Aniseed (Badishep) - 1 tsp
  11. Coriander seeds (Dhane) - 1 tbsp
  12. Small cumin seeds(Shahi jeera) -    1tsp
  13. Grated coconut - 2 cups
  14. Mint leaves - A handful
  15. Coriander leaves - A handful
  16. Turmeric powder 
  17. Chile powder
  18. Everest Chicken masala
  19. Curd - 1 tbsp

Method

1) Grind ginger, garlic, coriander leaves into a paste. 

2) Apply ground chicken. Also apply salt, turmeric powder, chili powder and chicken masala.  Apply curd. Let this marinate for about an hour



3) Add the potatoes to the chicken. Add little water and pressure cook. (One cooker whistle).

4) Heat oil. Add all the dry spices (Ingredients no 8-12). Fry for 2 minutes

5) Add the chopped onion. fry till brown

6) Add the grated coconut. Fry till brown.

7) Add the mint leaves. Fry for 2 minutes with constant stirring. Turn off heat. Spread on a plate and let cool.

8) Once cool, add tomatoes. Grind in mixer

9) Heat oil. Add the finely chopped onion.

10) Add chili powder, turmeric powder and chicken masala.

11) Add the ground paste.

12) Add the chicken.

Let cook. Server hot with rice/bread/roti.
